Neil, its like anything else, its all about animal prep, seasoning and cooking...and I suppose taste buds.
I've eaten many black bear and many different game animals. I've had venison I gave to the hounds yet usually I crave it.
Boar and Caribou and Gator I really enjoy. Elk? Depends on the above I guess. Same with Buffalo [bison].

Bear meat is tough and gamey and sometimes fatty. It makes a good stew though. Jerky, sausage, roasts (after marinating).

Like Woodly stated, the only thing I would add, is the bears age and diet. I have taken a few bears in Quebec that fed on acorns, and they were great table fair. I mixed ground Tug Hill bear meat , ground pork butts, seasonings and it turned out to be the best Italian Sausage I ever made. Just. Remember because of possible trichinosis, bear meat needs to be cooked thoroughly.
